かつて宿場町として栄えた東京、八王子。
その面影を残す黒塀通りの一角に私たちの醸造所はあります。
コンパクトでありながら充実の設備を取り揃えた
都市型の醸造所は、少量生産かつ年間醸造が可能な
マイクロブルワリーとして、1年を通して
常にフレッシュで付加価値の高い酒造りを実現。
また、「酒造りは農業の延長線上にある」という考えのもと、
地域の人たちと共創して酒米づくりを行うなど、
自分たちにしかできない新たな酒造りに挑戦しています。
東京八王子発、 酒からSAKEへ。
醸造や保管、 流通に至るすべての工程にこだわりながら、
未来に向けて、 日本酒の可能性を広げていきます。
Located in Hachioji, a district of Tokyo that
once flourished as a post town, our brewery maintains
the historical charm of its surroundings on Kurobei Street.
Our urban brewery, though compact, boasts cutting-edge facilities,
allowing it to function as a microbrewery capable of
small-scale production and year-round brewing. As a result,
we consistently create fresh, high-value-added sake throughout the year.
Moreover, with the belief that "brewing is an extension of agriculture,"
we collaborate with local people to produce sake rice, challenging ourselves
to craft a unique sake that only we can produce.
Emerging from Hachioji, Tokyo, we evolve from traditional "sake" to a broader,
more global concept of "SAKE". We are dedicated
to expanding the possibilities of Japanese sake for the future,
meticulously focusing on every step from brewing and storage to distribution.

東京八王子酒造があるのは八王子駅から徒歩5分、江戸情緒を今に伝える黒塀通りの一角です。料亭「すゞ香」に併設するコンパクトな醸造所ながら充実した設備環境のもと、多種多様な酒造りを実現します。
Located just a five-minute walk from Hachioji Station, Tokyo Hachioji Craft Sake Brewery can be found in one corner of Kurobei Street, which retains the atmosphere of the Edo period. Despite being a compact brewery annexed to the traditional Japanese “Suzuka” ryotei, it is equipped with comprehensive facilities to enable a wide variety of sake brewing.

With the advancements in equipment and improvement in technology in recent years, it is now possible to brew sake throughout the year. With a motto of producing a wide variety of sake in small quantities, we are committed to providing our customers with always fresh Japanese sake.
東京八王子酒造では、酒造りに欠かせない米づくりを農家・地域の人たちと共創することで、都市部における酒造りを米づくりから支え、個性あふれる日本酒を生み出していきます。
At Tokyo Hachioji Craft Sake Brewery, we co-create sake rice, an essential ingredient in sake brewing, with local farmers and community members. This allows us to support urban sake brewing starting from rice cultivation and continue to produce unique Japanese sake.

従来蔵元に足を運ばなければ味わえなかった鮮度の高い日本酒を提供することをモットーに食中酒としての日本酒の価値向上に努めています。「東京八王子酒造 prototype 生原酒」を生樽サーバーでお楽しみいただけます。
東京八王子の酒米を使い、八王子の酒蔵で日本酒を造る。日本酒の生産を通じてまちを元気にしたいという想いからスタートしたプロジェクト（NPO法人）です。今後、東京八王子酒造もこの活動に全面的に関わっていくことで日本酒を中心とした新しい取り組みにチャレンジします。
